Once the edges feel set, take the cookies out and give the pan one more good bang.I have notes and slips of paper from over 3 dozen attempts at making really good, chewy gluten-free chocolate chip cookies over the past 5 years of baking gluten-free before coming up with this perfect version! ![]() These cookies take about 10-12 minutes total to bake in my oven, but after 9 minutes I open the oven and give the pan a good bang which helps create the crackly top, then continue to bake for about 2 minutes more.
